Quick & Easy Broccoli Chicken Casserole


Honestly...I'm not sure this could be any easier!

Ingredients:
1/4 cup flour, 2 cups low sodium chicken broth, kosher salt and freshly ground black pepper, 3/4 cup shredded Cheddar, 4 cups medium broccoli florets, 3 cups frozen brown rice (thawed), 1 rotisserie chicken (skinned, white and dark meat shredded), 1/2 cup Parmesan



Preheat oven to 400 degrees. Whisk flour and broth in a large saucepan over medium heat. Whisk continuously until it comes to a boil. Continue whisking and boiling until mixture is thick and coats the back of a spoon.

Remove from heat and whisk 1 1/2 tsp of salt and 1/2 tsp of pepper. Add the cheddar and whisk until melted.

Add broccoli florets and stir to coat.

Mix shredded chicken and thawed rice in a large bowl. Pour broccoli mixture into chicken mixture and mix well.

Spray a 3 quart casserole dish with cooking spray and pour mixture into dish.
Sprinkle Parmesan cheese over the mixture.
Cover and bake for 25 minutes. Remove foil and bake until browned, 2 to 5 minutes.

Oh My! Look at all of that cheesy goodness!!!
This was so easy to make! It had protein, brown rice and a veggie all in one!

I hope you are all having great year so far.

I think I mentioned that I don't make New Year's resolutions. I keep feeling like I need to stay "present", to stay "with myself"...not running ahead or looking over my shoulder at the way things used to be. The Lord has provision and blessing for today, at this moment. What a joy to receive those gifts in the present.

Chicken Tetrazzini...The Hubs FAVORITE!


Seriously- His Favorite!
This recipe came out of the Pillsbury Easy Halloween Book. I thought I would try it. I think the Hubs wanted to eat the whole pan in one night...thankfully, we were able to get a few nights out of it!


Ingredients: 1 package spaghetti, 1/2 cup chicken broth, 4 cups chopped cooked chicken, 1 can each of cream of mushroom, cream of chicken, cream of celery, 1 (8oz) container of sour cream, 1 (6 oz) jar mushrooms, 1/2 cup shredded Parm, 1 tsp pepper, 2 cups shredded cheddar

Chopped Chicken!

This barely fit into a 13 x 9...2-2 quart casseroles would work, but you can gamble like we did and see if you can get it to fit into 1- 13 x 9.

Cook spaghetti according to instructions, drain and return to pot. Add broth. Mix remaining ingredients (except the 2 cups of cheddar) in a large bowl. Add noodles and broth and mix. Pour into the baking pan and cover with cheese. Cover and bake for 30 minutes at 350 degrees. Uncover and bake 5 minutes until cheese is bubbly.


This is so good!!! Very hearty and filling!

Tater Tots in a Casserole...What Are You Saying?!?!!!

Well, so all there is to say is: Yum!

Yes- go ahead and cheer- Tater Tots for dinner! Hooray!

Oh- but I've gotten ahead of myself.

Ingredients:

4 Tbsp unsalted butter
2 carrots, cut 1/2"thick rounds
2 stalks of celery, cut 1/4" half-moons
1 onion chopped (I actually substituted a large shallot- I had guests who don't like onions very much.)
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 cups chicken broth
1 cup whole milk (I used 2%)
4 cups shredded cooked chicken (*1 rotisserie chicken yields approx. 4 cups.)
3 cups frozen tater tots, thawed
1 tsp fresh thyme leaves (I substituted 1/2 tsp of dried thyme)

Directions:

Pre-heat oven to 450 degrees F.

Melt butter in a large heavy pot over medium-high until hot. Add carrots, celery and onion and season with 
1 tsp of salt and 3/4 tsp pepper.
Cook stirring occasionally, until veggies are golden, about 12 minutes.
Stir in flour, then whisk broth & milk, bring to a boil whisking.

Boil until slightly thickened, about 3 minutes.
Stir in chicken.
Transfer to a 2-quart baking dish.

Pulse the tots in a food processor with thyme. 

Pulse until medium ground. I left some tots a little more lumpy.


Scatter over the top of the casserole.

Bake until the filling is bubbling and topping is golden and
crisp, about 20 to 25 minutes.
Let stand 10 minutes before serving.

We covered ours with some fresh ground pepper. It yields 4 large servings.
I found this on the Food Network App and it was marked Easy- and it truly is! Especially if you cut cooking time with the rotisserie chicken.

This is the ultimate comfort food and in this girl's food diary...# 1 Casserole...I mean, it has tater tots!!!
