The Christmas Challenge!

I hope you all had a very Merry Christmas! 

Mine began with a little challenge I set for myself. Seven delectable dishes cooked in 1 afternoon.
December 23rd was cooking day!

Here goes...

#1- Pumpkin Crisp...

#2- Hashbrown Casserole

#3- Breakfast Casserole

#4- 2 Pans of Ham Delights

#5- Christmas Crack (half chocolate/ half without)...

#6- Savory Christmas-Shaped Crackers...

#7- Fig Tarts with a red-wine reduction and lemon-thyme scented goat cheese...

It was a really fun afternoon. All of this food was served for Christmas Eve and Christmas Day.

It was a challenge, but a delicious one!!!

The Best Dessert You Will Ever Make- Pumpkin Crisp!!!


I know...some of you don't like Pumpkin...

But this...this is no ordinary Pumpkin Dessert!

People who normally don't like pumpkin are making requests.
The first bite...yummmmmm!



Mix 1 (15oz) canned pumpkin puree with 1 cup evaporated milk, 1 cup sugar, 1 tsp vanilla extract, and 1/2 tsp ground cinnamon.

You will need 1 box Butter-Flavored Cake Mix- I use Duncan Hines!

Pour the pumpkin mixture into a greased 13 x 9. Sprinkle the cake mix over the pumpkin mixture.

Sprinkle chopped pecans (or walnuts or almonds...whatever you like or have on hand) over the top of the cake mix.
Melt 1 cup butter and pour over the top.


Bake in a preheated oven at 350 degrees for 1 hour or until golden brown. Let stand 10 minutes before serving.

Trust me...your guest will love it!

We serve ours warm with whipped cream and sprinkle of nutmeg!
