Corn Soufflé- A Family Favorite!

Corn Souffle'- A Family Favorite!


I received this recipe several years ago from a dear co-worker. It has become a staple of our Thanksgiving and Christmas meals!!!


Ingredients: 2 (16oz) cans whole corn (undrained), 2 (16oz) cans of cream style corn, 2 (8.5oz) boxes of Jiffy Corn Muffin Mix, 1 1/2 sticks of butter (melted and cooled), 2 cups of sour cream, 3 eggs (slightly beaten)

Mix all ingredients until blended and pour into a greased all purpose aluminum pan. (If you want to fix something that would fit into a 13x9, cut the ingredients in half, but use 1 stick of butter and 2 eggs.) If you are using an aluminum pan, make sure that you have it on a baking sheet to give some stability.

Bake at 350 degrees for about 1 hour, until golden.

I made a huge pan, and if we have any leftovers, they are quickly taken in to-go containers.

If you have a big group coming, this makes enough for 15-18 people.

With Great Thanks! Thanksgiving Decor...Easily Adapted for Christmas!

Place settings...I used Fall colored (woodsy themed) ornaments as place cards!


We started our Thanksgiving Day with a 5k walk- The Grateful Gobbler!

Over 3,000 members (families, furry- four-legged friends, Santa...) all walked to raise money for a Family Shelter at the area's Community Kitchen.


Often, families get broken up when they enter a shelter. For example, 10 year old boys can't go with their moms into the women's side of the shelter.

This family shelter will provide a way for families to stay together!

There was a great energy that morning! I loved being a part of it!!!

Ok- back to decorating...



I cut fall themed scrapbook paper into different shapes. I wrote "Thank You" in different languages and tossed them around the table. Guests tried guessing the language for the word...the answers were on the back.

This is easily adaptable for Christmas.


Simple gold chargers added a lot to the overall look.
Since we all sit in different places in our family, I used the place cards to send a message of Thanks!





I love candlelight! I found this pretty bird at Hobby Lobby.

We couldn't forget the kids! Their cards read: "I am Thankful for:" and then I wrote in their names!

All of these fall colored ornaments came from Hobby Lobby. None were over $2.99...and they were all 50% off!

Using scrapbook paper, I cut small shapes with fun scissors. I used a calligraphy pen to write my notes.

All in all, it was a day of Great Thanks!

There's Enough Grace For That!



Dear Mason,

It's my birthday today, and by now I would have already received a card from you that had old ladies in a convertible on the front. It would have said something about us being old, getting older, and of course getting better the older we get. I would have laughed, smiled, and my heart would be warm knowing you remembered me...several days in advance since you bought the card and mailed it.

This has been the hardest year of my life.

My health was not good for almost 10 months of the past year. The health issues gave way to depression. My family had a few health issues...and you passed away.
I had my first ever panic attack at 3 am.

...then...quiet...something had to give...I think it was me.

Can I be brutally honest for a bit? Well, of course I can. You always honored honesty, Mason.
I've hated my birthday for many years. Not so much for the getting older bit, but because it was one more year here...diabetic, colitis, PCOS, not getting it "right" me...
The horrible part about the Type 1 Diabetes...it will NEVER be perfect. I'll never get it "just right". How many years have I gone to the doctor with a slue of bad numbers and felt like it was my report card...and that I was always failing. Then when the other issues get added on...it feels like I'm destined to fail for the rest of my life. I get frustrated at the lack of perfection.

It brought me to the end of myself.
The sickness, the family health, the loss of you...the panic attack.



Sometime this year, gradually, (I can't pin point the time it started or began coming on strong) I left myself and walked to lay down in God's lap.

Grace, Mason, just Grace. I won't be good enough- ever. Not until the Lord returns.
At the end of me there is just a leaning into God's Grace.

When the numbers aren't perfect- there is enough Grace for that.
When feelings and physical symptoms change from day to day, or minute to minute...there is enough Grace for that.

It's just not about me (how hard I try, how good I am, what lovely works I accomplish)...
It's about Him. It's about the work He did and continues to do. And He freely gives His Whole Self to me!!!

He is good enough, so I accept His goodness, and now I have enough!

This is the first birthday in several years that I'm enjoying.

I'm enjoying being loved on by God. I enjoy letting me and my wish for perfection go, and instead laying my whole self in the lap of God...relying on Jesus' goodness and perfection to be mine...the free gift. I've put my faith in Him.

And there is enough Grace for that!

Christmas Casserole...A Little Early!

Sandra Lee's sister, Kimber,  came up with this one. The colors make it look all Christmasy!


Ingredients: 12 large eggs, 1/3 cup heavy whipping cream, 1 tsp salt, 1/2 tsp pepper, 1 jar (12 oz) roasted red peppers (rinsed and chopped), 1/2 cup crumbled bacon, 4 oz goat cheese crumbled, 1/3 cup sliced scallions, 10 slices of  white bread, torn (I used crescent rolls.)

Mix the first 8 ingredients. Spread bread (or crescent rolls) in the bottom of a 13 x 9 greased pan. 

Pour the mix over the bread/crescent rolls.

Bake at 400 degrees for 18 to 20 minutes until set.



This yummy, savory casserole is good on a weeknight as well as a weekend breakfast.

Easy Egg Nog Pancakes!


This could not be easier!
Hooray for Egg Nog!



Use your favorite pancake mix and substitute Egg Nog for the milk. Add cinnamon and nutmeg to taste.

Cook like normal...


We added scrambled eggs as our side!


Top with whipped cream and sprinkle with nutmeg.
What a delicious way to enjoy Egg Nog!

Warming Butternut Squash Bisque with Curry

La Bonne Femme Soup Recipe!!!

This soup warms you to your toes!
Curry is a warming spice. Combining it with the sweetness of the butternut squash is deliciousness in a bowl!

I roasted my squash for about 45 minutes at 375 degrees. You can see that I seasoned it with salt and pepper and tested its tenderness with a knife.

While my squash was cooling, I cooked 2 large, chopped, carrots and 1 medium sized, chopped, onion in 1 Tbsp of oil. I added 1 tsp of curry powder to the mix and cooked until the onion became tender.

I scooped the flesh of the squash and added it to the carrot/onion mixture.
I then added 5 cups of chicken broth and brought it to a boil. I reduced the heat and let it simmer, covered, for 15 minutes. 

I allowed the soup to cool slightly and then worked in batches to blend. (See the note about steam in a blender on the Silky and Light Potato Soup.)

I returned it to the pot and reheated.

I added 1 Tbsp of White Wine Vinegar.

We topped ours with a little sour cream and a sprinkle of nutmeg!

This dish tastes like Fall!
