Spooky Spinach Pie with Savory Scaredy Kitty Crackers

Spooky...and yummy...Spinach Pie!



Ingredients: 1 box of pie crusts, 3 Tbsp of butter, 1 large onion (chopped), 2 Tbsp flour, 1/2 tsp salt, 1/2 tsp pepper, 2 boxes (frozen, chopped, thawed, squeezed to drain) spinach, 2 1/2 cups shredded Italian cheese blend, 2 cups ricotta cheese, 4 eggs


Cook onion in butter. When tender add flour, salt and pepper.
Stir, cook 1 minute more.

Add spinach and cook 1 minute.



In a large bowl, mix cheeses and 3 eggs. Add spinach mixture and blend.



Roll 1 thawed pie crust into a pie plate.

Spoon mixture into crust.



Use second pie crust to cut out Spooky shapes.
We have 3 black cats...so we needed 3 spooky cats on our pie!
Paint pie crust shapes with the last egg.

Bake 45 minutes at 350 degrees until set and golden brown.
Let cool 10 minutes before serving.



I didn't want to waste the rest of the 2nd pie crust, so
I pulled out my Mediterranean spice mix, sea salt and pepper...

I cut out more Scaredy Kitty shapes and sprinkled
the tops and then sprayed a bit of  Pam.



Bake at 350 degrees for 15 minutes.



This is a very hearty meal!
And very festive!!!
